Tomato Bean Soup


  • 2 Cans Pureed Tomatoes
  • 2 cups pre-cooked Black Beans (retain water)
  • 1/2 cup unsweetened soy milk
  • 1-2 cloves garlic
  • 1 small yellow onion
  • Cayenne
  • Paprika
  • Black pepper
  • Cumin
  • Cilantro (fresh or dried to taste)

Chop onion and steam in pot until translucent, press or chop garlic and add to pot. Add tomato puree, beans and spices and allow to cook covered on medium heat for about 20 minutes. You can serve with the beans whole OR, as pictured, blend until smooth. If blending, use reserved “bean water” to reach the desired thickness.

Garnish with fresh cilantro and serve with quality whole grain bread (or our homemade sourdough!!!)
