Kale and Bok choy Chopped Salad


Ingredients:

  • 1 baby bok choy head
  • 1-2 leaves of kale
  • 1 sweet red pepper
  • 1 tomato
  • 1 tbsp unsweetened raisins
  • 1/4 c raw walnuts
  • Black pepper
  • Sumac
  • Apple cider vinegar

Preparation:
Finely chop kale, coarsely chop bok choy and mix with chopped tomato and sweet pepper. Separately chop raisins and walnuts. Season with a dash of vinegar, pepper and sumac. Refreshing and so healthy!
