Two Vegan Basic Marinara (a la Pasta)


  • 1 Package of Whole wheat pasta
  • 1-2 Carrots (shredded or pureed)
  • 1 Medium Onion chopped
  • 2 Cloves Garlic
  • 1 Can of crushed tomatoes (with basil)
  • Paprika
  • Cumin
  • Black pepper
  • Sumac (optional)
  • Optional additions: Zucchini, Spinach, Squash (precooked and cubed)



Cook chopped onion and garlic in a deep pan until translucent and then add carrots (and any of the optional ingredients for a special twist). Saute until soft and then add pureed/crushed tomatoes. Season with lots of black pepper, paprika and a touch of cumin. The carrot gives a nice sweet contrast to the savory flavors.

This sauce is delicious with quinoa or on pizza, as well as with pasta.

Serve with a green salad for a balanced meal!
