- 1 Package of Whole wheat pasta
- 1-2 Carrots (shredded or pureed)
- 1 Medium Onion chopped
- 2 Cloves Garlic
- 1 Can of crushed tomatoes (with basil)
- Black pepper
- Sumac (optional)
- Optional additions: Zucchini, Spinach, Squash (precooked and cubed)
Cook chopped onion and garlic in a deep pan until translucent and then add carrots (and any of the optional ingredients for a special twist). Saute until soft and then add pureed/crushed tomatoes. Season with lots of black pepper, paprika and a touch of cumin. The carrot gives a nice sweet contrast to the savory flavors.
Serve with a green salad for a balanced meal!
