- 2 Garlic cloves
- 2 Vegan Sausage links (Such as Field Roast brand)
- 1/2 Red pepper
- 1/2 Cauliflower head
- 2-3 Kale leaves
- Black pepper
This is a quick vegan/vegetarain meal that really warms you up. It’s also dairy free, and egg free.
Here’s what you do:
Preheat pan on medium heat. Coarsely chop onion and add to pan. Use garlic press to press cloves into pan and stir until translucent. Remove “sausage” from plastic wrapping and cut length-wise into quarters. Then cut into small slices and add to saute pan.
Cube pepper, cauliflower and kale and add to mixture. When using the Field Roast brand of sausage (here I used their Mexican Chipolte flavor, but all are great), you don’t need more spices. Other brands may benefit from a little extra cumin, paprika and cayenne. Saute covered and stir occasionally until cauliflower becomes tender.
If the mixture sticks add a bit of warm water to steam.
Great served with any grain or with fresh chopped salad!
