- 1 Large bag of washed spinach
- 2 Cups precooked chickpeas
- 1 Yellow or Vidalia onion
- 1 Clove garlic
- 2 tbsp Nutritional Yeast
- 1 tsp Cumin
- Black pepper
Preheat large saute pan on medium to high heat and add chopped onion and pressed or chopped garlic. No oil is needed if you have good quality pans. Otherwise add a drop of water and cover to steam untill translucent. Add spinach and stir gently until it starts to wilt. Next, add chickpeas, cumin, nutritional yeast and pepper. Continue to stir until all leaves have reached a soft wilted texture but are still a vibrant green. Serve with rice or quinoa for a balanced meal!

If you know that you will not be eating immediately, slightly under-cook the spinach and cover, it will continue to steam on its own. Just be careful to uncover once it is ready so that it does not over cook. Enjoy!
