Vegetable Tzimmes

Ingredients:

  • 2 Medium Acorn Squash
  • 2-3 Medium Sweet potatoes
  • 2 Cups Dried pitted Prunes
  • 2 Cups Unsweetened Apple Juice
  • Cinnamon
  • Ginger
  • Black Pepper

 

Preparation:
This is great for the upcoming Jewish holiday of Passover when a meat Tzimmes is usually made. It is delicious, vegan and healthy!

Cut and de-seed squash and cube into two bite pieces. Wash and cut sweet potatoes into similar sized pieces. Place all on a roasting pan and scatter prunes throughout. Sprinkle with seasoning and drizzle juice on top. Roast in a preheated oven at 450 degrees Fahrenheit for an hour and a half or until tender.

This simple holiday recipe is vegan/vegetarian, gluten free, dairy free and egg free. Enjoy in good health!
