Gingery Rice & Bean Mix up


Ingredients:

  • 2 cups black beans (rinsed canned or soaked and precooked)
  • 2 cups precooked brown rice
  • 1 tablespoon tahini
  • 1 full tablespoon pickled ginger
  • 1 leaf kale
  • Raw pumpkin seeds
  • Cayenne
  • Rice vinegar (Less sugar/less sodium version preferred

Preparation:
Dice pickled ginger and kale and mix in large bowl with beans and rice. On the side, mix together tahini and cayenne with 2 tbsp rice vinegar. Add water slowly while stirring until you reach a creamy consistency. Pour over mixture and sprinkle with pumpkin seeds. It’s a refreshing Asian flavored take on the traditional rice and beans. MMM!
