Quinoa Marinara


  • 1 cup Quinoa
  • Cilantro (about 1/4 cup chopped)
  • 2 Tomatoes
  • Cumin or Baharat (Middle Eastern Spice Mix)
  • Red Pepper Flakes
  • Black Pepper
  • Paprika
  • Garlic powder
  • Onion powder
  • Sumac (optional)


Prepare Quinoa by bringing it to a boil with 2 cups of water. Close and simmer for 20 minutes. While this is cooking grate tomatoes using a grater and mix in garlic, onion, sumac and black pepper. Once cooked, allow to cool for a bit and then mix in spices and chopped cilantro. Serve with a bit of sauce spooned over the top. A nutritious take on a classic Italian dish.
