Lemony Quinoa Avocado Salad


  • 2 cups dried red quinoa (plain works just as well but we find the red to be nuttier tasting)
  • Parsley
  • Lemon
  • 1 Avocado
  • 1 yellow onion
  • Cumin
  • Black pepper
  • Dash of cinnamon
  • Olive oil

Cook quinoa (1 3/4 cups water per cup of quinoa)
Chop parsley and onion and set aside
Cube small pieces of lemon including the rind. Remove seeds. (We recommend organic since the peel will be eaten)

Mix all ingredients including spices in a serving bowl. Halve the avocado and remove its pit. Slice in each half in a grid pattern and scoop out into the serving bowl. Be careful not to mash the avocado when mixing. Add a drizzle of olive oil at the end for taste.
