No-Huevos Rancheros (Mexican Scrambled TVP and Beans)

Ingredients:

    Scrambled TVP

  • 2 Cups TVP Flakes
  • 3/4 Cups Water
  • 1 Yellow Onion
  • 1 Tomato
  • 1 Cup Fresh Parsley (chopped)
  • 1 Tbsp Fresh Basil (chopped)
  • 1/4 Tsp Garlic powder or 1/2 Clove Chopped Garlic
  • 1/2 Tsp Cayenne
  • 1/4 Tsp Cumin
  • 1/2 Tbsp Yellow Mustard
  • 1/4 Tsp Tumeric
  • 1 Tsp Sumac
  • Black Pepper
     
    Guacamole *not pictured

  • 1 Avocado
  • 2 Tbsp Chopped Onion
  • 1 Tbsp Apple Cider Vinegar
  • 1/2 Tsp Dried Cilantro
  • 1/2 Tsp Dried Parsley
  • 2 Tbsp Water
  • Black Pepper
  • Sumac

 

    Refried Beans*Not pictured

  • 1 Can Traditional “Refried” Pinto Beans
  • OR

  • 4 Cups Pre-Cooked Pinto Beans Pureed and reheated with Sumac

 
Preparation:
Pre-heat pan and add chopped onion (reserve portion for guacamole). Add water and TVP flakes and stir. Add seasonings and mustard and stir gently. Add chopped parsley, basil and tomato. Stir together until tomato is slightly cooked.

Place reserved onion in a bowl and scoop out insides of avocado. Add ACV, Cilantro and Parsley and water and stir together in a mortal and pestle or bowl. Season with Sumac and Black pepper.

Serve a layer of beans topped with scrambled TVP and a dollop of Guacamole. Great additions are tofu sour cream, salsa or hot sauce, and nutritional yeast. This would also be delicious as a sandwich or wrap! Enjoy!
