Brassica ‘Sausage’ Mix up


  • 1 Small head of Cauliflower
  • 2 Cups Fresh Spinach
  • 3-4 Kale leaves
  • 1/2 Yellow onion
  • 3-4 Baby Bella Mushrooms
  • 1 Red pepper
  • 1 Cup Lima beans (pre-cooked)
  • 1-2 Cloves garlic
  • 2 Vegan Sausage links
  • Cayenne
  • Black Pepper
  • 2 tbsp Lemon juice
  • Sumac

Chop onions and add to warm pan. Stir over medium heat until translucent. Then chop or press garlic in a garlic press and add to pan. Cut ‘sausage’ links into small pieces and add to pan. Wipe off mushrooms with a damp cloth and cut off tip of “trunk”. Slice width-wise and into thin slices and add to mixture and stir. Cut cauliflower into pieces of your preference and mix in. Next add your Lima beans, chopped sweet pepper, cut up kale and spinach.It’s important to add the ingredients that flavor the dish first, followed by those that take the longest to cook and lastly add the ingredients that cook quickly. Lastly, season to taste with lemon juice, cayenne, black pepper and sumac.

We enjoyed this over whole wheat couscous, but it would be delicious over whole wheat pasta, bulgar, brown rice, or any other grain. Possibilities are endless…
