“Chocolate Pudding”


Ingredients:

  • 1 avocado
  • 2 frozen bananas
  • 1/4 c soy milk (at most)
  • 1-2 tbsp unsweetened carob powder
  • 1-2 packets of powdered Stevia
  • 1 cap-full of Vanilla extract

Preparation:
Serves 2
In a food processor, blend together avocado, bananas,Stevia and vanilla while slowly adding soy milk. Add only enough to puree the ingredients, you want a creamy but not watery texture. For the layered effect seen above, spoon a half the mixture into your glasses. Add carob powder to remaining mixture and blend. Top off your dessert cups with the “chocolate” layer and serve.

Makes people, both pregnant and not, very very happy…
