Gluten Free Quinoamaranth Loaf


  • 1 cup Quinoa (raw)
  • 1/2 cup Amaranth (raw)
  • 1/2 cup Cornmeal (raw)
  • 1 cup Apple Juice
  • 2 cups water
  • 1 cup chopped Prunes and Raisins
  • 4 packets Stevia
  • Cinnamon


Put all ingredients in a pot and bring to a boil. Cover and simmer for 30-40 minutes until thickened. Pour into a silicone bread loaf tray or ramekin sprinkle with cinnamon and let cool for an hour. Slice and serve.

This original 2VC recipe is vegan/vegetarian, gluten free, dairy free and egg free. Plus it’s low GI (glycemic index). Enjoy in good health!

This is delicious toasted and served with tahini or nut butter!
