Two Vegan Baked Falafel

Ingredients:

  • 2-3 cups Garbanzo Beans (Chickpeas)
  • 1 Garlic clove
  • 1/2 Bunch fresh Cilantro
  • 1/2 Bunch fresh Parsley
  • 1 1/2 Tsp Cumin
  • 1/2 Tsp Cayenne
  • Sumac
  • Black Pepper

 
Preparation:
This is one of the biggest hits among our friends. One friend specifically requests this when she comes from NYC for a visit. We’re sure you’ll like it too! It’s vegan/vegetarian, dairy free, egg free and wheat/gluten free. Here’s what you do:

Soak chickpeas for 6-12 hours prior to cooking. Cook over medium heat partially covered for 60 to 80 minutes or until soft. Wash and dry cilantro and parsley. Add to food processor with garlic and pulse until coarsley chopped. Add chickpeas and spices and blend into a chunky batter. Add water or chickpea broth if more moisture is needed.

Preheat oven to 375 degrees Fahrenheit. Using a silicone baking sheet or a nonstick baking pan, create balls approximately 1 inch in diameter and place 1/2 inch apart on sheet. Bake until golden brown (time depends on moisture in mix but approximately 25 minutes should work!).
