Sweet and Cleansing Parsley Raisin Salad

Ingredients:

  • 2 bunches Flat Leafed Parsley
  • 1/4 to 1/2 Cup Raisins
  • 1 to 2 tbsp Apple Cider Vinegar
  • Black Pepper
  • Sumac

 
Preparation:
This is a delicious and refreshing salad that is easy to make and accompanies almost any meal! It’s obviously vegan/vegetarian, dairy free, egg free and wheat/gluten free. Here’s what you do:

Wash and dry the parsley and remove the tough portion of the stems. Place into a food processor and pulse several times before adding the vinegar. Process by pulsing until coarsely choppped. On the side, chop raisins coarsely and mix together in a bowl.

This is a simple yet refreshing salad that is great served as a garnish or main coarse. Parsley is usually disregarded as a garnish and left on the plate; yet it has amazing healing properties. It is great for circulation, virility, and has cleansing properties that some say are anti-cancerous. So eat up!
