Flaxseed Crackers with Green Tahini

Cracker Ingredients:
- *Makes approximately 8 Dehydrator Trays of Crackers
- 2 Cups Flax Seeds (raw un-hulled)
- 1 Cup Pureed Tomatoes with Basil (such as 365 brand)
- Fresh cilantro
- Garlic powder
- Onion powder
- Paprika
- Cayenne
- Nutritional Yeast
Preparation:
Soak flax seeds in 3 cups water for approximately 6 hours or until they have reached a gelatinous texture. Then mix in pureed tomatoes, seasonings and chopped cilantro. Spread in a thin but even layer on trays of a dehydrator and cook at 115 degrees Fahrenheit for 5 hours. At 2 and a half hours flip the sheets of flax seed crackers to dry the opposite side.
These make delicious raw crackers and are full of fiber and Omega-3! Enjoy with our green tahini described below.
Tahini Ingredients:
- 1/2 Cup Sesame Seeds (raw un-hulled if available)
- 1 Whole Lemon
- Fresh Parsley
- Garlic powder
- Sumac
- Black pepper
Preparation:
Blend all ingredients in a high power blender such as a Vitamix. The more parsley and lemon the tastier. This keeps well in a fridge for about a week and is delicious on crackers (such as the above), with Hummus, and much more!
