2 Vegan Blintzes

Noodle *Makes 4 Large Blintzes

  • 1 Cup Whole Wheat Flour
  • 1 1/4 Cup Water
  • 1 Stevia Packet
  • Avocado oil

Savory “Cheeze” Filling

  • 1/2 Package Tofu
  • 1/2 Lemon
  • 1 Stevia Packets
  • 3 Tbsp Chopped Basil
  • 1 Tomato Chopped (optional)
  • 1/2 Avocado sliced thinly (optional)

Sweet “Cheeze” Filling

  • 1/2 Package Tofu
  • 1/2 Lemon
  • 1 Stevia Packet
  • 1/4 Cup Chopped Raisins
  • Cinnamon

It’s rare to have a table full of guests that appreciate vegan cooking. In one instance of a guest who loves his non-vegan dishes I came up with this vegan variation on a blintze. Here’s how you make it:

Mix together flour, stevia and water in a bowl using a wire whisk. If you like your noodle extra thin, slowly add and test mixture on a hot pan until desired density is reached. Ours came out a bit thick and we’re working on the right ratio.

In a food processor or blender, mix tofu, stevia and lemon for a base. I used the same “cheeze” filling for the savory and sweet but added the different “accessories” to give each one a twist. If you want to make the sweet sweeter or the savory “saltier” then use the above proportions and reserve each mixture in a bowl.

Preheat a large flat pan and a small warming pan on Med-High heat. Wipe with avocado oil (or another oil with a high Smoke Point). Using a ladle or a large spoon, pour noodle batter onto pan and spread using the back of the spoon into a circular “pancake”. Once batter starts to show small bubbles all over, flip and add filling in a centered horizontal stripe. Fold inwards on two sides after 2 minutes. Move onto warming pan to “seal”.

Repeat until all batter has been used and your creativity for new fillings exhausted. Feel free to comment if you have any interesting combinations of your own!!
